I'll second the excellent advice you've received here and add one little additional piece of information that may be helpful.
You need to research the local market in depth because, believe it or not, folks in Kansas and Nebraska pay a lot LESS for produce and fruits than people in Arizona (for example) do. A friend of ours questioned the prices in the stores down there and then sent us tear sheets from the local Nebraska and Kansas newspapers to prove his point that they were selling things for less than half the prices charged in Arizona for identical produce. One example was bananas at 5 cents a pound versus 49 cents a pound...So be sure to check it out.
You may also wish to check on the demand for Gluten-Free foods for celiacs and gluten-sensitive folks which often 'goes along with' organic food sales. Yes, in the heart of wheat country, it does happen but how often, or how great the demand may be, I don't know.
